French Tarragon, known scientifically as Artemisia dracunculus var. sativa, is a perennial herb highly prized in culinary circles for its aromatic, slightly anise-like flavor. Unlike its Russian counterpart, French Tarragon has a more refined taste and is considered essential in classic French cooking, particularly for sauces like béarnaise.
This herb features slender, glossy green leaves that grow on upright, branching stems. It typically reaches about 2 to 3 feet in height and spreads slowly, making it suitable for small garden spaces or as a potted herb. French Tarragon blooms rarely, and when it does, it produces small, inconspicuous greenish flowers.
French Tarragon prefers full sun to partial shade and thrives in well-drained soil. It’s well-suited to container gardening and raised beds, as it doesn’t like to have wet roots. This herb is hardy in USDA zones 4-9, but in colder climates, it benefits from mulching or protection during the winter.
